My Favorite Fall Recipe: Roasted Fall Vegetables Served With a Zesty Dip

As the leaves change and the air turns crisp, there’s something undeniably comforting about the flavors of fall. One of my all-time favorite fall recipes is a simple yet incredibly satisfying dish of roasted fall vegetables, including brussel sprouts, cauliflower, and sweet potato wedges. But what takes this recipe to the next level is the unusual crowd-pleasing dip that accompanies it. Get ready to tantalize your taste buds with a combination of mayonnaise, Old Bay seasoning, olive oil, and garlic that will have your guests begging for the recipe.

Ingredients:

For the Roasted Fall Vegetables:

  • 1 pound Brussels sprouts, trimmed and halved
  • 1 large cauliflower, cut into florets
  • 2-3 sweet potatoes, peeled and cut into wedges
  • 2 tablespoons olive oil
  • Salt and pepper to taste

For the Zesty Dip:

  • 1/2 cup mayonnaise
  • 2 tablespoons Old Bay seasoning (adjust to taste)

Instructions:

  2. In a large mixing bowl, combine the Brussels sprouts, cauliflower florets, and sweet potato wedges.
  3. Drizzle olive oil over the vegetables, ensuring they are well-coated. Season generously with salt and pepper, to taste.
  4. Spread the seasoned vegetables in a single layer on a baking sheet lined with parchment paper or a silicone baking mat. This allows them to roast evenly and develop a beautiful caramelization.
  5. Roast the vegetables in the preheated oven for about 30-40 minutes or until they are tender and slightly crispy on the edges. Make sure to toss them once or twice during cooking for even browning.
  6. While the vegetables are roasting, prepare the zesty dip. In a small bowl, whisk together mayonnaise, Old Bay seasoning, olive oil, and minced garlic until well combined. Adjust the Old Bay seasoning to suit your preferred level of spiciness.
  7. Once the roasted fall vegetables are ready, remove them from the oven and let them cool for a minute or two.
  8. Serve the vegetables hot alongside the zesty dip, allowing your guests to drizzle, dip, or smother to their heart’s content.
